Back to school: Organising packed lunches

I don’t mind admitting that I actually detest making packed lunches!

If I had it my way, I would make up a weeks worth of sandwiches on a Sunday afternoon and then freeze them. I did actually try this…..once…..but I was moaned at by the hubby and the girls for giving them wet, soggy sandwiches! I’ve seen plenty of other bloggers who successfully freeze sandwiches but alas I just cannot do it to save my life!

I am not one for making lunches in the morning, in fact I am not a morning person at all! Therefore I make the packed lunches in the evening, usually whilst cooking dinner.  The way I see it, is that if I’m in the kitchen anyway, I might as well kill two birds with one stone so to speak!  It doesn’t feel like such a task that way!

Another trick is that I make up two days worth of sandwiches at a time and nobody seems to have noticed, well not yet anyway! It may take a little longer but the thought of having a night off spurs me on to make them in bulk!IMG_1168IMG_1169

I try not to put anything too wet in day 2’s sandwiches as something like cucumber or tomato tends to sink into the bread and make it soggy.  I then wrap them in foil and stick a little post it note on the top so I know who’s who.IMG_1170IMG_1172I try to keep the girls lunches healthy but this week my hubby did the shopping and came home with white bread.  We usually have brown or 50/50 but I am lucky that they aren’t too fussy when it comes to bread.

I also organise the girls morning fruit snacks and water bottles at the same time.

I then put the lunchboxes, fruit snacks and water bottles in the fridge over night, ready for the hubby and girls to take out just before they leave.  I save so much time in the morning having done this the night before!
